Fried Mushroom
"You must have vegetarian food for breakfast on the first day of Chinese New Year. It's a tradition.", my mother instructed.
I had mee sua soup with mushrooms last year. So for variety's sake, I decided to fry the mushroom this time round. It turned out great! The best thing is, it's so easy to prepare and cook!

Ingredients
1) Soften the dried mushroom by soaking them in the water
2) Cut into strips
3) Squeeze the mushroom dry
4) Coat the mushroom with flour
5) Deep fry
6) Drain and sprinkle with salt while the mushrooms are still hot
I couldn't help popping the fried mushrooms into my mouth and only stopped when I realised that it will not be enough for the breakfast the next day. Opps! :P

Sweet and Sour Chicken Strips
I gave up frying with my wok. It always stick. I wanted to buy a fryer, but I don't want to waste the money nor do I want my kitchen top to be cluttered with yet another electrical appliance.
I have decided to fry food in my small pot. Surprisingly and much to my delight, it works! No sticking of food to the wok. I get to cover the pot and prevent oil from splattering, without having to use a big cover (for the wok). This means less washing for my hub and less effort in mopping the floor for me. :)
Anyways, I was trying to 'replicate' the delicious Sweet and Sour Chicken balls we had at the kopitiam tze char. I didn't manage to get the exact taste but the product was just as tasty, especially when the chicken strips are still piping hot from the pot. :) Eh? Hot. Pot. It rhymes. Heh...

Ingredients
1) Marinade the chicken with light soy sauce, oyster sauce and pepper
2) Coat with chicken strips with Egg and flour
3) Fry the chicken strips till golden brown
4) Combine the seasonings and pineapple and heat it over moderately low heat.
5) Mix the sweet and sour sauce with the chicken strip
My hub was pretty pleased with all the dishes I have cooked today. It really makes my day! :D

Fried Beancurd
Frying Beancurd is actually nothing difficult to accomplish... until you are not frying it in a non-stick pan. However, I came to realise that coating it with flour not only helps to reduce (not eliminate) the 'stickiness' in a normal steel wok, it also enhances the taste by making the beancurd crispier. Definitely worth a try.

1) Heat oil in high heat
2) Coat the beancurds lightly with corn flour
3) Dip the beancurds into the heated oil
4) Remove from wok
5) Sprinkle lightly with salt while it is still hot
6) Serve

Ingredients
- 2 beancurds cut into four cubes each
- 5 tbsp corn flour
- Cooking oil
Seasonings
- Salt
1) Heat oil in high heat
2) Coat the beancurds lightly with corn flour
3) Dip the beancurds into the heated oil
4) Remove from wok
5) Sprinkle lightly with salt while it is still hot
6) Serve
